How many vanilla beans and how much alcohol do you need for a batch of homemade extract? Enter any one of the three numbers (bean weight, alcohol volume, or container size) and the calculator fills in the rest.
Choose your strength: single-fold is standard grocery-store extract, 1.5-fold suits most home bakers, double-fold is for cookies, cakes, and ice cream, and triple-fold is the concentration professional bakers use. The calculator offers two formulas. We like the Co-op formula because it makes a slightly richer extract than the FDA minimum, but you can play around with it, adding a little less or a little more.
