Not every vanilla bean needs to be gourmet. Extract grade beans — sometimes called Grade B — are lower in moisture content than Grade A, which actually makes them more efficient for extraction. More of the bean’s weight is dry matter, which means more vanillin per pound going into your infusion.
Our Madagascar Red Splits are V. planifolia beans with the same classic Madagascar Bourbon flavor profile as our gourmet line: rich, buttery, creamy, and sweet. The “red splits” name refers to the characteristic appearance of these beans — the pods have opened slightly during curing, giving them a distinctive look that in no way diminishes their quality or flavor.
