Price range: $35.00 through $200.00
Short Mexican beans, priced for extract.
Already priced well below typical Mexican vanilla, so the Thanksgiving coupon codes do not apply to these beans.
V. Planifolia. Extract beans.
These are good, aromatic Mexican beans, just short: most 3 to 4 inches (about 8 to 10 cm). Vanilla is graded partly on length and short beans sell for less, so we have priced these well below what Mexican vanilla beans usually cost. Extract is made by weight, not length, so you still get full Mexican vanilla flavor in the bottle.
- Aromatic Profile: Warm, creamy vanilla with clove, cinnamon spice and subtle cedar over dried fig.
- Description: Short, slender whole beans, most 3 to 4 inches (about 8 to 10 cm). The photo shows a real bag of these beans next to a ruler.
- Price check: Mexican extract-grade beans typically sell for $20 or more an ounce. These run $12.50 to $17.50 an ounce, depending on size.
- Ideal for: Homemade vanilla extract, vanilla syrup and vanilla sugar.
- Craft extracts: A natural match for bourbon, dark rum, mezcal and aged tequila.

Description
Mexican Vanilla from Veracruz
These are V. planifolia beans from Veracruz, Mexico, the birthplace of vanilla. Learn more about this origin on our Mexican vanilla beans page.
Why They Cost Less
They are short. Most measure 3 to 4 inches (about 8 to 10 cm), shorter and slimmer than a gourmet bean. Vanilla is graded partly on length and short beans sell for less, so we have priced these well below what Mexican vanilla beans usually cost. Length matters when you split a bean to scrape the seeds into a recipe. It does not matter in a bottle of extract.
Flavor Profile
Warm, creamy vanilla with the notes that set Mexican vanilla apart: clove-like spice, cinnamon warmth, subtle cedar and an undercurrent of dried fig. Same species as Madagascar vanilla, V. planifolia, with a distinctly different character.
Best Used For
- Homemade vanilla extract in bourbon, dark rum, vodka, mezcal or aged tequila
- Vanilla syrup for coffee and cocktails
- Vanilla sugar
- Steeping in cream, custard and ice cream bases
What You Get
Whole V. planifolia beans, most 3 to 4 inches (about 8 to 10 cm) long, vacuum sealed. The photo is a real bag of these beans next to a ruler. Extract is made by weight, not length. The FDA standard for single-fold vanilla extract is 13.35 oz of beans per gallon, whatever their size. If you want long, plump beans to split and scrape, choose one of our gourmet vanilla beans instead.
New to extract? Our extract maker guide covers ratios and timing, and the vanilla extract calculator works out beans and alcohol for any batch.
