The secret to preserving their luxurious aroma and flavor for a year or more comes down to controlling just four simple factors:  air exposure, light, temperature, and humidity.

1. The Golden Rule: Use an Airtight Container

An airtight glass jar or food-grade plastic container is essential. This keeps moisture out, retains the beans’ natural oils, and prevents them from drying out or absorbing foreign smells.

We recommend that you wrap your vanilla beans in wax paper, then put inside the container.

2. Stick to a Dark, Room-Temperature Spot (and NEVER Refrigerate)

The ideal temperature is 60°F to 85°F (15°C to 29°C), which is typically fine for a pantry or cupboard. Crucially, never refrigerate or freeze vanilla beans. Refrigerators either dry out your vanilla or introduce moisture through condensation, which can promote mold growth and can actually destroy the volatile compounds responsible for that amazing vanilla scent. 

Instead, store vanilla in a dark cupboard or pantry away from stoves, ovens, and windows.

3. Maintain Flexibility with Wax Paper

Gourmet vanilla beans should feel flexible and slightly oily. If your environment is too dry, they can harden. Wrapping the beans in wax paper before sealing them in the container helps to lock in their natural moisture.

Extract-grade vanilla beans are drier on purpose. With extract-grade vanilla beans, you are not paying for the extra moisture or water weight that you get with the Gourmet-grade beans. Both kinds of vanilla beans contain seeds and compounds that make vanilla flavorful.

4. Give Them a Breath of Fresh Air Every Few Months

We recommend inspecting your beans every couple of months. Open the container and expose the beans to the air for at least a few hours, or a full day, before re-sealing.

Studies by food scientists show that aerobic conditions (exposure to air) are beneficial for developing and maintaining flavor in cured vanilla beans. Conversely, storing beans in a completely air-free environment for extended periods (such as long-term vacuum sealing) can lead to off-flavors due to anaerobic activity.

What about long-term storage (more than 6 months)?

After 6 months, you should open the package and follow the ‘Air Out’ rule above. Expose the beans to the air for a few hours or a day, then wrap them in wax paper and move them to a non-airtight container (glass jar or Tupperware-style). Keeping vanilla in a completely air-free environment for too long can actually lead to unwanted off-flavors.
