Located north of Australia and the Indian Ocean, near Malaysia and Singapore, the country of Indonesia consists of a series of islands. The largest and most well known of the Indonesian islands are Sumatra, Java and the southern part of the island of Borneo.
Indonesia has been supplying cosmetically beautiful vanilla beans for many years, but in the past they have been characterized at times by a rather "smoky" aroma and flavor. This peculiarity was due to the Indonesians' technique of curing their vanilla beans over fire, rather than the more time consuming sun dried method common to Madagascar and the other true Bourbon origins (Comoros and Reunion Island). In recent years, the Indonesians have improved their methods, and the quality of their vanilla has improved correspondingly.
