Vanilla did not originate in Madagascar. It originated here — in Mexico, in the lush tropical lowlands of Veracruz, where the Totonac people of the Totonacapan region cultivated and traded vanilla long before European contact. For centuries, this was the only place in the world where vanilla grew. That heritage lives in every pod.

Our Mexico Gourmet Vanilla Beans are grown in Veracruz and harvested late in the season to maximize moisture content and caviar density. These are V. planifolia beans at their most expressive — dark, glossy, supple, and deeply aromatic in a way that is distinctly different from Madagascar despite being the same species.

Flavor Profile

Warm, creamy vanilla anchors the experience, but Mexican terroir adds layers you will not find elsewhere: clove-like spice, cinnamon warmth, subtle cedar, and an undercurrent of dried fig. Bold and complex without being sharp.
